Marmalade 390g
Marmalade is not unique to Britain, in fact the name is derived from the Portuguese word ‘marmelo’ (meaning quince). Nearly every European country uses the term marmalade in some form.
In Italy, and the region of Puglia marmellata is made with peaches, figs, quinces, other fruits, and of course, di agrumi (citrus). We produce a blend of for the marmalade or a simple single fruit. We make our marmalade from all of the fruit growing around our Trulli. Including, blood orange, bergamot, Seville orange, pink grapefruit, kumquat, lime, various lemons, mandarin, clementine and quince.
There are various cooking methods used to produce our marmalade. Fruit is often best for marmalade when slightly under ripe, acidity helps activate the pectin in the fruit, which sets the marmalade.

"Trulli olive oil, which we use both at Towpath and at home, is the stuff of dreams. Electric green, peppery and fruity, it elevates the flavour of everything it touches. As the year wears on, it mellows in colour and flavour (like all the best oils!), but never loses its shine. We simply love it.”
