Fico Sangue - Fig Gelato

This gelato is deep scarlet in colour and has an amazing flavour of honey nectar and berries.

INGREDIENTS:
550g ripe figs
100g dark sugar like
Costa Rican Dulce
The juice of 1 lemon
100ml marsala
160ml double cream

METHOD:
Blend figs, dark sugar, and lemon juice together (not too fine). Add the marsala and cream and turn through until mixed, then chill for an hour or so. Churn for 30 minutes in an ice cream maker. Or alternatively, cover and freeze until firm for 3 or 4 hours. Set in the refrigerator to soften for 30-40 minutes before serving.
